Souper Greens Soup!

This is a great winter soup, but it is also very full of fresh summer flavours!


This is very warming, and very green! (a bit like a pond) but it tastes awesome.

The ginger gives you some fire and is also an anti-inflammatory, which can help with nausea & digestive issues. Green veggies and garlic to help boost your immune system, (along with many other great properties of garlic) and the fresh coriander, lime & ginger give it an delicious fresh Asian taste.


Tip of the day: if you often get colds try adding more garlic into your diet! It can certainly help reduce the severity of colds or flu.


Souper Greens Soup


600ml veg stock (boullion powder)

1 tbsp oil

2 garlic cloves

½ red onion chopped finely

Thumb size piece of ginger, sliced

½ tsp ground coriander

½ tsp turmeric

Pinch of salt (Himalayan pink if you have it)

1 large courgette, roughly chopped

Small head of Broccoli roughly chopped

200g spinach

1 lime, zest & juice

Small bunch fresh coriander chopped incl stalks


1. Heat the oil, add the onion, garlic, ginger, coriander powder, turmeric & salt. Heat for 2 mins then add 3 tbsp water to loosen.

2. Add courgettes, mix it all up well and cook for 3 mins, then add 400ml of the stock and cook for a further 3 mins.

3. Add the Broccoli, spinach and the rest of the stock, cook for about 4-5 mins

4. Take it off the heat & add the chopped coriander, lime zest, and juice and blitz in the blender.

5. Enjoy!!
