Healthy Banana Muffins!

This recipe was given to me by my dear friend Claire Herbert many years ago...
I have since made countless batches, usually for work (so I didnt eat them all myself!)
People would actually bring old brown bananas into work especially for me so that I could bake muffins for the office!!
So here is the recipe...
Makes 12 big muffins
250g flour - I use half wholemeal and half Gluten free plain flour but you can mix up what you prefer.
2 tsp Baking powder
100g Molasses sugar or dark brown unrefined
Handful of pumpkin seeds (optional, or other seeds will do)
Handful of raisins/sultanas or chopped dates (your choice)
100ml coconut oil
4 very ripe bananas mashed
2 Tbsp Milk
Set the Oven to 180 degrees
Mix Flour, baking powder, sugar, seeds, sultanas together. In a separate bowl mix all the wet ingredients - oil, eggs, bananas - then mix together.
Fold altogether quickly, divide into a greased muffin tin. ( I use the silicone muffin trays - they are brilliant!)
Bake for 20 mins
Place on a cooling rack
